"Now Open" The new Del Dotto Estate Winery and Caves on our Estate in St. Helena. The new Caves are lined with Italian marble and ancient tiles. The Venetian chandeliers and mosaic marble floors will bring us back full circle to our family’s origin of Venice, Italy.

This new tasting facility is one of the most beautiful in the world giving wine its rightful position as a sacred beverage deserving a Cathedral.  The facility will highlight the “history of wine” including wines made and aged in ancient clay wine vessels. DEL DOTTO TESTS NEW YEASTS FOR RED WINES FOR RELEASE IN 2006
We have proved to the wine consuming public that using the finest oak barrels in the world changes the flavor of wine. But did you know that using a different yeast changes the color, the mouth-feel, the nose, the texture and the finish? We have been experimenting and have found some expensive, rare, yeasts that make wine explosive!
