The 2011 Del Dotto Brut Cuvee from our Cinghiale Vineyard is an elegant blend of Pinot Noir and Chardonnay from the Sonoma Coast. This Cuvee offers beautifully complex aromatics as a result of four years of aging en tirage. A wonderful toasty, almond, leesy quality is indicative of the time en tirage, but the fresh notes of strawberries and cream are derived from the perfect growing conditions for Pinot Noir on the Sonoma Coast. There is also a distinctive sea shell mineral quality derived from the Chardonnay when it is picked at the early stages of development appropriate for sparkling wine. Also a result of the extended bottle time, the mouthfeel is definitively full, but maintains a balancing acidity, and lively pallet.
