The youthful bouquet is lively, fresh, and brilliant. Made in the traditional Methode Champenoise style, the wine shows nuances of delicate stone fruits, strawberry, and crisp, red delicious apple. The palate is even more exciting and explosive exuding a full mouth-feel, nuances of linzer torte, crushed raspberry preserves, baby wild strawberries, graham cracker and a hint of creamy vanilla bean on the crispy, clean finish! The 2012 Del Dotto Sparkling Wine is an elegant cuvee of Pinot Noir and Chardonnay from our Cinghiale Vineyard on the Sonoma Coast. We have kept this wine en tirage for four years to enhance it’s complexity, depth, and mouthfeel, however it still shows an incredibly vibrant fruit expression and lively palate. Fresh fruit notes of strawberry, cherry blossom, and fuji apple give way to light aromas of shortbread cookies and a beautiful toasty quality with hints of almond.
This wines has a beautiful color and exhibits aromas of dried brush, black cherry and meaty characters. Dense flavors of fresh cut fruit and fleshy bright plum. It finishes with a powerful and balanced long finish with slight tannin and spice.

This is a beautiful Pinot Noir from the cliffs of the Sonoma Coast along Northern California's breathtaking view of the Pacific Ocean. This Pinot has the richness afforded by the California sunshine with the elegance of its ancestors from Burgundy, France. The bouquet is full of flowers, fresh pine, wild mushroom with a hint of cinnamon and clove. The palate delivers pillow soft maraschino cherries, black tea, subtle allspice, finishing with vanilla and fresh earth. The Cinghiale Pinot Noir is a perfect example of balance, refined and layered, world class artwork from one of the world's most difficult red wines to produce.
From first glance, notice the wonderful "tawny" color, a blend of brick red, deep orange and vibrant garnet colors. This warm expression presents in the aromas filled with nutty notes of hazelnut, toasted almonds, and chestnuts. The very ripe and rich essences of currant and blueberry extract are complimented by notes of fresh cedar and leather. The elegance of this wine really shows through on the palate where the silky sweet expression of Napa Valley fruit integrates perfectly with the warmth and richness provided by the brandy fortification. The 2016 Sauvignon Blanc has excellent depth and concentration. As these vines on the Sonoma Coast are reaching maturity, we can see the full quality of this wine show through. Aromas of quince, citrus blossoms, and limestone minerality. While the palate has great texture and weight, there is a framing acidity that maintains this as a very food friendly wine.
