2012 Bubbles Sparkling Late Disgorged

Produced using the traditional Méthode Champenoise, the 2012 Late Disgorged Sparkling Cuvée marks the first release in our late disgorged sparkling program. While all of our sparkling wines spend time en tirage—the period when the secondary fermentation occurs in bottle to naturally create the wine’s fine bubbles—this special cuvée was aged for a minimum of ten years on the lees before disgorgement, allowing exceptional complexity and refinement to develop.
Extended time en tirage allows the lees from the secondary fermentation to gradually impart their classic autolytic character, contributing layers of creamy texture and subtle nutty richness. Late disgorged wines often reveal greater nuance and evolution than their earlier-disgorged counterparts, showcasing the remarkable harmony that develops through patient aging.
The 2012 Late Disgorged Sparkling Cuvée is strikingly refined, revealing a distinctive oyster shell minerality that reflects its coastal origins. Though approaching a decade of bottle age, the wine remains beautifully preserved, opening with a mouth-coating richness that is lifted by a vibrant beam of acidity. This balance of texture and freshness carries through a long, elegant finish, leaving an impression of purity, energy, and remarkable longevity.
