Tasting Notes:

All of our sparkling wine spends some time en tirage before being disgorged. This is the time when the secondary fermentation is working in the bottle to produce the actual bubbles. The longer you leave the wine en tirage, the more time the lees from the secondary fermentation have time to impart their classic developed creamy and nutty characteristics. The late disgorged wines generally are more layered, complex, nuanced, and evolved wines than their early disgorged counterparts. The 2012 Late Disgorged Sparkling Cuvee is extremely refined with a definitive oyster shell minerality. While it is approaching a decade of age, it is incredibly well preserved with a mouth coating entry balanced by a beautiful beam of acidity that keeps it fresh and lively. -9 year aged LATE DISGORGED- The 2013 Late Disgorged Sparkling Cuvee is certainly a representation of the vintage. Very rich in style, this wine presents interesting aromas of honey comb, lime stone, beeswax, green apple, and citrus zest. A very dynamic wine, which certainly benefited from its extra time en tirage. -8 year aged LATE DISGORGED-
