2013 Bubbles Sparkling Late Disgorged

Produced using the traditional Méthode Champenoise, our Late Disgorged Sparkling Cuvée represents the pinnacle of our sparkling wine program. While all of our sparkling wines spend time en tirage—the period during which the secondary fermentation occurs in bottle to create the wine’s fine bubbles—this special cuvée was aged for a minimum of ten years on the lees before disgorgement, allowing extraordinary complexity and depth to develop.

Extended time en tirage allows the lees from the secondary fermentation to gradually impart their classic autolytic character, contributing layers of creamy texture and nuanced, nutty richness. Late disgorged wines are often more evolved and multidimensional than their earlier-disgorged counterparts, offering remarkable balance between maturity and freshness.

The 2013 Late Disgorged Sparkling Cuvée beautifully reflects the character of the vintage. Rich and expressive, the wine reveals layered aromas of honeycomb, limestone, beeswax, green apple, and citrus zest. On the palate, vibrant acidity lifts the wine’s depth and richness, while the extended lees aging provides a creamy texture and remarkable length. The finish is refined and complex, lingering with mineral freshness and evolved elegance.

Aged a full ten years en tirage, this late disgorged release represents one of the most layered and sophisticated expressions of sparkling wine from the Sonoma Coast.
