The 2016 Sparkling Cuvee shows the pedigree of the Cinghiale Vineyard, the classic revinement of its methode champonoise production, and the elegance and mature evolution from its extended time in tirage.  This wine is layered aromatically, presenting the tirage expressions of almonds, pie crust and marzipan, as well as the vineyard expressions of strawberry compote, and white peaches.  The palate is lively and effervescent as expected, but the mouthfeel also holds tension, weight, and texture reflecting the extended tirage time.  Lovely at any time, you can enjoy this wine now or for many years to come.
