2021 Beast Extended Aged Cabernet Sauvignon 750ml
Tasting Notes:
We started a new experimental program in which we left The Beast Cabernets in barrel for extended aging to see what the affects would be on the wines. Our Extended Aged Beast wines have proved to be a huge hit! Since the 2017 vintage, we have been leaving The Beast to age for longer than our normal releases in the barrel to see what the effect of the extra years would do. It has resulted in an added level of texture, mouthfeel and smoothness to the wine that is absolutely addicting!
Normally we would age The Beast Cabernet releases for about 18-24 months on the finest French oak barrels we have. For the Extended Aged program, we leave The Beast in barrel 18-24 months longer to age for a total of 42 months on oak. The velvety texture of these wines adds a layer of dimension and could arguably be the best we have ever made. The wines are so delicious with the extra extended barrel aging we are now holding back a limited number of barrels of The Beast production to keep this program going.
