Tasting Notes:

The famous barrel from esteemed local Napa Valley cooperage Seguin Moreau.  This unique selection of American oak is typically sourced from the Ozarks in Missouri.  With the U-stave technology, the barrel exposes the juice to more surface contact and the toasting of the oak.  Quite the distinctive bouquet from its softer French oak counterparts.  The nose is very complex with layers of smoked meats, honeysuckle and chocolate chip cookie.  On the palate, there is a zesty flavor of java plum, black currants and freshly cut tobacco leaf.  The finish is silky smooth with a touch of spice to round out the sweetness of the fruit!
