Tasting Notes:

By carving a series of u-shaped channels (10mm wide & 5mm deep) throughout every American Oak stave, Seguin Moreau cooperage has developed a toasting technique that increases the surface area by 50% resulting in a deeper intensity/complex aromatic profile for a variety of wines. This increase of surface area to volume ratio drastically intensifies the exchange between wine & wood in comparison to regular oak barrels. In addition, the channeling provides softer tannin extraction.

This unique American oak showcases a variety of enjoyable aromatics.  Often referred to as the bacon barrel or honey baked ham barrel because of its savory and toasty characteristics.  Each of our Estate vineyards interacts with the U-Stave barrel beautifully exposing more surface area from the barrel to the wine. These wines integrate and age beautifully in the bottle as they age.
