We here at Del Dotto are very lucky and blessed to be able to showcase perfect berries from St. Helena, Rutherford, Oakville, Howell Mountain and Pritchard Hill. The Beast has received multiple 100 point ratings, truly offering the creme de la creme from each of our top vineyards! It is 100% Cabernet Sauvignon.
The Beast Extended Aged
Cabernet Sauvignon
Our Extended Aged Beast wines that have proved to be a huge hit! Since the 2017 vintage, we have been leaving the wine to age for longer than our normal releases in the barrel to see what the effect of the extra years would do. It has resulted in an added level of texture, mouthfeel and smoothness to the wine that is absolutely addicting! Normally we would age The Beast Cabernet releases for about 18 months in the finest French oak barrels we have. For the Extended Aged program, we leave The Beast in barrel 24 months longer to age for a total of 42 months. These wines are why we call our wine SILK JUICE!
The Beast Single Cluster
Cabernet Sauvignon
Essentially, a cordon-trained grapevine, with two arms and five shoots on each arm, optimally ripens two clusters of grapes per shoot. We decided to cut back the fruit to yield a single cluster per shoot which we hoped would increase the vines’ ability to produce a more intense and concentrated wine. It did just that! The resulting wine highlighted each single vineyard’s characteristics and complexities, with lush nuances and had incredible structure and quality. The Single Cluster wines are 100% Cabernet Sauvignon aged in our favorite French oak barrels.
